From Garden Dinners to NYC Brand Activations: Crafting Social Art Through Food
This past September, Cocoon had the pleasure of hosting a vibrant, multi-day brand activation and showroom at Casa Joy. At the heart of the experience was Chef Lauren Bruhn, whose Italian-inspired menus added warmth, soul, and just the right touch of Mediterranean flair to the five-day experience.
Part culinary artist, part event producer, and full-time champion of community through food, Lauren’s work goes far beyond the plate. From passed Mediterranean salads to playful pizza moments, her creations brought people together and made the brand’s vision feel tangible, grounded, and intimate.
“I started hosting dinner services out of my garden this summer, which has always been a dream of mine,” Lauren told us. “I thought of the dinners as kind of a social art project by sort of over-eventizing the whole thing.”

Choosing the Hardest City on Purpose
Lauren’s path to New York wasn’t exactly conventional. Raised in the South by an Italian New Yorker, her childhood was shaped by cross-regional contrasts, family flavors, and early memories of NYC.
“My grandparents came to New York from Italy, so while I was raised in the South, I was raised by an Italian New Yorker, and spent time here as a kid,” she shared. “I wanted to start cooking professionally and knew that I wanted to do it in the most difficult city to do it in, so I suddenly moved to New York when I was 27 — three weeks after making the decision.”
Her style? Unpretentious but deeply considered. Whimsical, soulful, rooted in seasonality and community. Exactly the kind of creative spirit that feels at home in Cocoon’s world of one-of-a-kind venues and experience-led spaces.
Balancing the Kitchen and the Clipboards
Lauren often wears two hats during an event: she’s both designing the culinary experience and producing the event logistics around it. That dual role gives her a unique perspective and a very long checklist.
““Since I work as both the event producer and the chef of most of my events, keeping those two roles separate and equally organized can be challenging,” she explained. “I have to be very firm with myself, as my own boss, to stay on top of all the details that surround both food and events.”.”
Managing the culinary side of a brand activation like this also meant coordinating with a wider production team, staying aligned with the schedule of showroom hours and the flow of the private dinner. From plating to service, Lauren had to balance efficiency with artistry, ensuring that food became a seamless part of the guest experience.
And then there were the realities of working in a historic townhouse. Lauren recalls the chic but temperamental elevator at Casa Joy, a feature that became a daily adventure for the cooks moving ingredients and equipment up and down.
“I could write a short story about pulling that event off with the, how should I say it, chic but unreliable elevator at Casa Joy,” she said with a laugh. “Many cooks had adventures in that chariot.”
It was a reminder that behind polished events are teams navigating challenges with creativity and a sense of humor.

A Historic NYC Venue That Feels Like a Secret
For five full days, Casa Joy transformed into a space of creative energy, style, and connection — with Lauren’s food as a grounding element. The venue’s historic architecture, cozy textures, and art-filled rooms created a uniquely transportive experience for the brand’s guests.
“It felt like being in both an art museum and being taken back in time to Old New York,” Lauren said. “The details and charm of Casa Joy are unmatched — you can tell that someone very special occupies the space.”
That balance — refined, yet intimate — made Casa Joy the perfect backdrop for a fashion-forward showroom and brand activation that valued storytelling as much as aesthetics. For a chef like Lauren, it created room for food to become a central character in the scene.
The kitchen was reserved exclusively as a back-of-house hub, where Lauren and her team prepared each plate with precision to match the prestige of the event. Timing, presentation, and consistency were crucial. Every dish leaving the kitchen had to reflect the same standard of care that the brand put into its showcase.
Where Lauren Wants to Cook Next
Lauren is always looking ahead to the next table she can set. After leading the culinary program for a high-profile brand activation at Casa Joy and experimenting with her own garden dinners, she continues to seek spaces where food can spark connection and creativity.
She is especially drawn to venues that carry character and atmosphere, places where every detail adds to the story of the event. For future projects, she is eager to collaborate with Cocoon again, exploring how different Casas can provide the backdrop for her evolving approach to food as both craft and experience.
